Almond Flour Cookies

Ingredients

  • ⅓ cup butter, melted
  • ½ cup packed brown sugar
  • 1 egg, at room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 1 ¾ cups packed fine blanched almond flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • Pure cane or sanding sugar, for rolling

Directions

  1. Preheat the oven to 350 degrees. Line a sheet pan with parchment paper.
  2. In a large bowl, stir together the butter, sugar, egg, vanilla and almond extracts.
  3. Stir in the almond flour, baking soda, and salt until well mixed.
  4. Using a heaping tablespoon, roll the cookies in sugar and then place them on a sheet pan 2 inches apart.
  5. Bake for 11-15 minutes until the edges are golden and tops are cracked. Cool on the sheet pan for 2 minutes, then transfer to a cooling rack to cool completely.
